The Producers

William Fèvre is the most important wine
producer in Chablis. Even before the purchase of this
venerable house by Champagne Joseph Henriot in 1998,
William Fèvre was considered among the
foremost of Chablis wineries. Since the takeover,
this has become a benchmark for the appellation.

Patrick Piuze, on the other hand, is a relative
newcomer. Québecois by origin, it was Marc
Chapoutier who originally fired Patrick’s
interest in wine. Owning a wine bar in Montreal and
winemaking for Olivier Leflaive and Maison Verget are
all on his CV, whilst further down the resumé,
under “interests”, one finds both a
fascination for Chablis and its soils and a restless
determination to make the very best possible wine
from his fruit. Within a very short period of time,
Patrick has elevated himself to the very peak of
quality wine production in Chablis.
