Carricante is an ancient white wine grape variety from eastern Sicily and is now known as the white grape of Mount Etna: it is required in all wines of the Etna DOC - 60% in Etna Bianco, 80% in Etna Bianco Superiore. It is also grown elsewhere in Siciliy where it is often blended with other white - and, indeed, red - grapes. Carricante is known for its marked acidity, and the high yields which gave rise to its name (carica means "load" in Italian).
