Pecorino - Grape Variety

Pecorino is a white grape variety which originates from Le Marche in eastern-central Italy. Low-yielding, it was ignored for other more-productive varieties until it was revived in the late 19th century. The grapes offer high acidity and high sugar levels, but these are balanced in the final wines which are often crisp, herbal and fresh with a certain minerality in their acidity. Pecorino "little sheep" but is unrelated to the Italian sheep's milk cheese of the same name, although the two together coincidentally make for a good food and wine pairing!
