Cos (as it is abbreviated) was founded by Louis Gaspard d’Estournel in 1811. Louis was very forward-looking and not only marketed his wines widely around the world, but also bottled, labelled and sold his own wine from the chateau. India was a big market for the wines of Cos, hence the Asian design of the chateau itself. For a period Cos and its neighbour had the same owner - the Chamolue family - before being bought by Fernand Ginestet in the early 20th century. Fernand's grandchildren (having the surname Prats) were running the estate in the '90s when it was sold to the Merlaut family of the Taillan group: a short tenure, as they sold it on two years later to Michel Reybier. The winery has since been completely renovated.

"The 2007 Cos d'Estournel is blended of 85% Cabernet Sauvignon, 12% Merlot and 3% Cabernet Franc. It has a deep garnet-brick color and the nose reveals quite a lot of evolution—more than the previous six vintages tasted before it in this tasting—with notes of prunes, figs, chargrill and dried herbs plus hints of raisin cake, leather, balsamic and incense. Medium-bodied, refreshing and mature in the mouth, it delivers a good concentration of savory/spicy flavors and an herbal lift on the finish. It should remain at this evolutionary plateau for the next decade, before it begins to decline." Lisa Perrotti-Brown

Most red wines are dry and therefore are indicated with a 1. The sweetness becomes more relevant with white wines, sparkling wines and pudding/dessert wines such as Sauternes and Tokaji.
