Champagne Ayala was founded in 1860 by Edmond de Ayala in the village of Ay. Champagne Ayala is one of the oldest champagne houses and was one of the founding members of the Syndicat des Grandes Marques. It pioneered a drier style of champagne, favoured in Britain: one of the house's most important export markets. Ayala was given a royal warrant by Edward VII in 1908.
Champagne Ayala was bought by Bollinger in 2005 and a complete refurbishment of the wine making facilities has since been undertaken. There is, once again, a focus on producing wines of the traditional style: wines of purity and elegance.

The 2014 vintage has produced wines that are more generous and riper than its immediate predecessor. And that is apparent in its pungently generous nose of ripe citrus fruit that includes lime and grapefruit; even a touch of orange. The tongue is met by a super-fine mousse that comes over as a touch creamy. It is vastly long in flavour and offers a superbly textured experience with grip provided by lemon and lime acidity that’s held within. All our wines are given a Sweetness Indicator from 1 to 5, with 1 being the driest and 5 being the sweetest.
This can be found for every wine under the Wine Details tab.
Most red wines are dry and therefore are indicated with a 1. The sweetness becomes more relevant with white wines, sparkling wines and pudding/dessert wines such as Sauternes and Tokaji.

If a wine is being listed duty paid, only the duty paid price is shown. Duty Paid wines have been removed from Bonded Storage and cannot be returned to an Under Bond status. They can be stored in a professional warehouse but will be stored Duty Paid.
